Maitake or Hen of the Woods (Grifola frondosa).
Followed for several days the growth on my usual spot (this year 4 mushrooms under a big oak stump).
Finally; the prime specimen was picked today:
Cleaning is somewhat tedious (lot of slugs and bugs in the folds).
Cooking is simple saute until water evaporates on medium heat:
Final result:
Cooled goes to freezer bags.
